Stuffed Zucchini Boats

I would usually put this filling in my lasagna but I’m trying to cut some calories. This dish is oh so good and filling!

You need...

🍲 2 white onions- diced

🍲 1 medium size red pepper - diced

🍲 1 tablespoon of olive oil

🍲 2 diced celery stalks

🍲 3 diced carrots

🍲 3 minced cloves of garlic

🍲 3 teaspoon of chili powder

🍲 2 zucchini’s

🍲 pinch of salt for zucchini’s

🍲 1 teaspoon of salt for filling

🍲 pinch of black pepper for zucchini’s

🍲 1 teaspoon of black pepper for filling

🍲 1 lb of ground beef

🍲 1 cup of provolone or Parmesan cheese

🍲 2 tablespoon of olive oil


1. Preheat oven to 350.

2. Wash and dry zucchini.

3. Slice zucchini’s in half.

4. Scoop out the middle of each piece

5. Place on a lined baking sheet.

6. Sprinkle the zucchini with a little salt and pepper.



7. Clean and dice- celery, carrots, pepper, onion and garlic.

8. In a skillet: add all step 7 ingredients with olive oil.

9. Cook til the onion becomes translucent.

10. Add the meat and seasonings.

11. Cook for about 7-8 minutes, till the meat is pretty much cooked.

12. Scoop mixture into the zucchini boats.

13. Sprinkle with provolone or Parmesan cheese.



14. Bake til the cheese is melted, about 5-7 minutes
