Pork loin

Easy, one pot meal. My favorite!


🥕 1 lb pork loin

🥕 2 tablespoon of olive oil

🥕 1 stick of unsalted butter

🥕 2 garlic cloves - minced

🥕 2 tablespoon of fresh thyme minced

🥕 1 bag of small carrots

🥕 1 1/2lb of mini potatoes

🥕 1 teaspoon of salt

🥕 1 teaspoon of fresh ground pepper

1. Preheat oven to 350.

2. Wash and pat dry pork loin, set aside.

3. Warm up olive oil in a skillet, on medium heat. 4. Wash and dry carrots and potatoes. 5. Brown all sides of loin in skillet. This helps lock in the juice and keep the meat moist.



6. Remove from skillet and place in a big baking dish.

7. Season meat with salt and pepper.

8. Melt butter in small saucepan.

9. Add garlic and thyme and let simmer so the flavors marinate together.

10. When the butter is simmering, cut potatoes and carrots down the middle.

11. Put veggies in a mixing bowl. Pour butter over veggies and stir.



12, Place veggies around the meat and cover.



13. Bake for 1 1/2 hours. 1 hour into the cooking, uncover dish so the top gets a nice golden brown.
