Pineapple Upside Down Cake 🤤🤤

You need...


Bottom of the cake

šŸ3/4 of a cup of brown sugar- packed

šŸ 1/4 of a cup of unsalted butter

šŸ 2 tablespoon of pineapple juice

šŸ 1-20oz can of pineapple slices

šŸ Jar of maraschino cherries


Cake

šŸ 2 cups of flour

šŸ 1/2 teaspoon of salt

šŸ 2 1/2 teaspoon of baking powder

šŸ 1/4 teaspoon of baking soda

šŸ 3/4 cups of granulated sugar

šŸ 2 large eggs- room temperature

šŸ 3/4 cup of buttermilk- room temperature

šŸ 1/4 of a cup of pineapple juice

šŸ 1/2 cup of melted butter- room temperature

šŸ 1 teaspoon of vanilla extract

šŸ 1 tablespoon of sour cream


Preheat oven to 350.

For bottom of cake.

1. In a saucepan combine brown sugar, butter and 2 tablespoon of pineapple juice.

2. Warm over medium heat until sugar dissolves.

3. Pour sauce in baking dish (I used 9 in round cake pan).

4. Place pineapple rings in pan starting in the center and then working around it.




5. Put cherries in the middle of rings.

For the cake...


6. In a large bowl bowl sift flour, salt, baking powder, baking soda and sugar together. Set aside.

7. In another bowl, whisk eggs.Add buttermilk, 1/4 cup of pineapple juice, cooled butter and vanilla.

8. Pour buttermilk mixture into flour mixture. Combine well, don’t over stir.

9. Gently fold in sour cream. 10. Pour batter over pineapple slices.

11. Bake 45-50 mins. When toothpick is inserted in the middle of the cake and comes out clean, it’s done.


Dust with powder sugar and enjoy every single bite!
