No Bake Raspberry Lemon Cheesecake

I love Cheesecake! This recipe is so easy to make, everyone will be asking for seconds.


You need...

šŸ„§ 1 pint of raspberries

šŸ„§ juice of 1/2 lemon

šŸ„§ 1/4 cup of granulated sugar

šŸ„§ 10 ounce of lemon sandwich cream cookies- you can use whatever you prefer

šŸ„§ 4 tablespoon of melted butter

šŸ„§ 12 ounces of white chocolate chips

šŸ„§ 3- 8 ounces of cream cheese- Softened

šŸ„§ 1 teaspoon of vanilla

šŸ„§ 1/2 cup of powder sugar


1. Put raspberries in a saucepan with granulated sugar and lemon juice.

2. Bring to a boil and cook til the raspberries break apart.

3. Strain the raspberries to remove seeds. Set aside.

4. In a gallon bag or a food Processor: break apart or pulse the cookies, handful of white chocolate chips and butter.

5. Press mixture on the bottom of a pie dish.

6. Place in freezer to let the crust harden while making the filling.




7. Microwave the rest of the white chocolate til melted. Set aside.

8. Using an electric mixture : combine cream cheese and vanilla. Beat til itā€™s fully combine.

9. Slowly add powder sugar. 10. Then add white chocolate slowly to the mixture, Mixing the whole time.

11 Grab the crust out of the freezer and pour the creamy mixture into it.

Refrigerate for at least 3 hours.

I like to garnish with raspberries, strawberries cut into hearts and some drizzled melted white chocolate.
