Lemon shortbread

I love cookies that are slightly Tart with a hint of sweetness. Perfectly served with coffee in the morning, glass of milk for a snack or after dinner sweet bite. Perfect for anytime!

You need...

🍋 1 cup of softened butter

🍋 1 cup of powder sugar

🍋 2 tablespoon of fresh lemon juice- you may need more

🍋 1 pinch of salt

🍋 2 1/2 cup of flour

Icing

🍋 1 cup of powder sugar

🍋 1/2 teaspoon of fresh lemon juice

🍋 1/2 teaspoon of heavy cream


1. Preheat oven to 375.

2. Using a electric mixer, beat butter and sugar together til combined.

3. Add lemon juice and salt, combined.

4. Slowly add flour. The consistency will be like sand. Continue mixing til it combined. You may need to add more lemon juice. 5. Lightly flour a surface. Grab the mixture and form into a ball.Roll the mixture into about 3/4 of a centimeter in thickness.

6. Using a round cutter, cut out shapes. Place on a lined baking sheet.



7. Bake for 6 minutes, make sure not to brown the cookies.

8. When cookies are cooled, make icing. Mix all the ingredients together and drizzle on top. Let the icing harden before serving, about 5 minutes.
