Lemon garlic encrusted chicken thighs


Chicken is my all time favorite protein, so I’m always trying to find new ways to cook it. This by far is my favorite way to cook it!

You will need...

🍋 About 2lbs of boneless chicken thighs

🍋 2 tablespoon of olive oil

🍋 1 teaspoon of salt

🍋 1 teaspoon of fresh ground black pepper

🍋 1 teaspoon of red pepper flakes

🍋 3 garlic cloves minced

🍋 2 lemons- zest and wedges

🍋 2 tablespoon of minced fresh thyme

🍋 1 teaspoon of Hungarian Hot Paprika


1. Preheat oven to 350.

2. Heat up your olive oil in a skillet, on medium heat.

3. Rinse and pat dry your chicken.

4. Lightly sprinkle thighs with salt and pepper on both sides.

5. Lightly brown the thighs in the skillet. This helps lock in flavor and keeps the chicken moist.-Remember your not cooking the chicken all the way through.

6. So as the chicken browns, place browned chicken in a baking dish.

7. Sprinkle a little more salt and pepper on the chicken.

8. Then add red pepper flakes, minced garlic, lemon zest, thyme and paprika. 9.Slice the lemons and place on top of the chicken.




10. Cover and place on the oven. Bake for about 60 mins. But of course this depends on how big the thighs are.


I served mine with roasted, glazed carrots and squash-ini.
