Cranberry Orange Bread

You have leftover cranberries from the holiday? Or you want something tart and sweet. This is a must try.


You need...

🍊2 cups flour

🍊1 teaspoon baking powder

🍊1/2 teaspoon sea salt

🍊 1 cup granulated sugar

🍊 1 1/2 tablespoon of fresh orange zest

🍊 1/2 cup of buttermilk

🍊 1/2 cup of vegetable oil

🍊 1/2 cup of fresh orange juice

🍊 2 large eggs

🍊 1 cup of fresh cranberries


Icing

🍊1 cup powder sugar

🍊 2 tablespoon fresh orange juice

1. Preheat oven to 350.

2. Grease a loaf pan.

3. In a medium bowl: sift flour, baking powder and salt. Set aside.

4. In a separate bowl combine sugar and orange zest. Stir until the sugar turns a light orange color.

5. Using a stand mixer: whip orange juice, buttermilk, eggs, vegetable oil and vanilla till combined.

6. Continue beating egg mixture, and Alternate adding sugar and Flour mixture to it. Slowly add both.

7. Remove from stand mixer. Using a spatula stir in cranberries.

8. Transfer dough to loaf pan.



9. Bake for 70 mins. Bread is cooked when a toothpick in inserted in center comes out clean.

10. Remove from oven and let cool before icing.


Icing

Mix both ingredients and drizzle over loaf .
