Banana Coffee Cake

Perfect for breakfast, snack or just because!

You need...


Crumb Topping

🍌 8 tbsp of cold butter

🍌 1 cup of flour

🍌 1 cup of brown sugar

🍌 1 tsp of cinnamon


Cake

🍌 4 medium bananas

🍌 8 tbsp of melted butter

🍌 1 3/4 cup of sugar

🍌 2 eggs

🍌 1 tsp of vanilla

🍌 2 cups of flour

🍌 1 tbsp of baking powder

🍌 1 tsp of salt

🍌 1 cup of milk

Glaze/icing

🍌 1 cup of powder sugar

🍌 1 tbsp of milk

🍌 1 tsp of vanilla

1. Preheat oven to 350.

2. Mix all crumb toppings together using a fork. You want to leave it crumbly. Set aside.

3. Mash bananas in a large bowl til smooth.

4. Add melted butter, sugar, eggs and vanilla. Mix til combined.

5. In a separate bowl- mix flour, baking powder and salt.

6. Add half of banana mixture to dry ingredients.

7. Add half of the milk to dry ingredients. 8. Repeat step 6 and 7. Everything should be combined now.

9. Pour half of the cake mixture into a lined 9 by 13 baking pan.

10. Pour half crumb topping on top.

11. Pour remaining cake mixture on top of crumb topping.

12. And then sprinkle the remaining crumb mixture on top.

13. Bake for about 45-50 minutes. When a toothpick is inserted in the middle comes out clean, means it’s done.

14. Mix all icing mixture together and pour on slightly cooled cake.



Perfectly pairs with coffee!
