Apple Muffins

These by far are my favorite muffins. Extremly moist and packed with flavor. You won’t regret making these!


You need ...

🍎1/2 cup of softened unsalted butter

🍎 1 cup granulated sugar

🍎 2 large eggs- room temperature

🍎 1/2 cup of milk- I used whole milk

🍎 1 teaspoon of vanilla extract

🍎 2 cups of all purpose flour

🍎 1/2 teaspoon of salt

🍎 1 teaspoon of baking powder

🍎 1 1/2 cup of diced, peeled apples- I used 3 small size gala

🍎 optional- 1/2 cup of nuts- I used macadamia nuts

Topping

🍎 5 tablespoon of cold unsalted butter

🍎 1/2 cup of all purpose flour

🍎 2 tablespoon of granulated sugar

🍎 2 tablespoon of brown sugar

🍎 2 teaspoon of ground cinnamon

Icing

🍎 1 tablespoon of melted unsalted butter- slightly cooled

🍎 1/2 cup of powder sugar

🍎 1 tablespoon of milk- I used whole milk

🍎 splash of vanilla extract


1. Preheat oven to 350.

2. Line a muffin tin with liners. Set aside.

3. Using an electric mixer, beat butter and and sugar until combined.

4. Slowly add one egg at a time. Then add milk and vanilla.

5. Sift flour and baking powder, add to mixture.

6. Peel and diced apples and chop nuts- fold into mixture.


7. Using a ice cream scoop, scoop into muffin liners. I fill half way.

8. Next make topping. Put all ingredients into a bowl. Make sure the butter is cut into small cubes. 9. Using a fork or pastry cutter, combine til everything is crumbly.

10. Sprinkle over muffins.


11. Pop in the oven and cook 22-27 minutes depending on size of your muffins. 12. Once cooled, make icing. Combine all ingredients together and whisk until smooth.

13. Drizzle over muffins and then let it set. Drizzle another layer over it. Let the icing set. Repeat until all icing is gone.
